Daikon Radish Anpo Persimmon Marinade

Ingredients (2-3 servings)
  • (A)Anpo persimmon:1
  • (A)Lemon juice:3/4 lemon (2.5 tbsp)
  • (A)Olive oil:1.5 tbsp
  • Daikon radish:1/4 radish
  • Chervil (French parsley):season to taste
  • Pink pepper:season to taste
  • Salt and pepper: season to taste
Cooking Instructions
  • Cut the daikon radish into thin half-moon slices (use a slicer if you have one). Sprinkle 1/4 tsp of salt over the radish slices and gently rub them. Let sit for 5 min. When it softens, squeeze out the water.
  • Remove the leaves, stems, and seeds from the Anpo persimmon and chop finely.
  • Mix the (A) ingredients with the daikon slices, add salt and pepper to taste, and then let sit for 10 minutes in the refrigerator.
  • Remove from the refrigerator, plate, and decorate with chevril and pink pepper.

    This dried persimmon is a winter specialty local to Marumori. Compared to regular dried persimmon, it is closer to a fresh persimmon, with a soft, juicy texture. Naturally sweet, it tastes good both alone and added to dishes.

Rice Wonton and Shiso-Pickled Umeboshi
Egg Drop Soup

Ingredients (2-3 servings)
  • GLUTEN FREE NOODLE Wonton:60g
  • Shiso(perilla)-pickled umeboshi:3
  • Naganegi scallion:1/2 stem
  • Potato starch:1 tbsp
  • Egg:1
  • Aojiso (green perilla) (can be substituted with egoma perilla or another flavorful ingredient):5leaves
  • (A)Water:500ml
  • (A)Chicken broth:1 tbsp
  • (A)Cooking sake:1 tbsp
Cooking Instructions
  • Cut the naganegi scallion into 3-4cm pieces, and then slice the pieces into thin strips. Thinly slice the aojiso. Remove seeds from shiso-pickled umeboshi and mince. Beat the egg. Mix the potato starch with 1 tbsp water.
  • Add the (A) ingredients into a pot and turn on the heat. Once its boiling, add the umeboshi and naganegi and simmer at low heat for 3 minutes. Remove from heat. Stir in the potato starch-water mix, and as soon as it's added turn the heat back on and cook it until it starts to thicken. Stir in the egg, and once it solidifies, stir the soup and remove from heat.
  • Serve in a bowl and sprinkle with aojiso.

Tofu Kamaboko Fish Cake and
Celery Ma-La Stir Fry

Ingredients (2-3 servings)
  • Sasanao Tofu Kamaboko Fish Cake:2
  • Celery:1 stem
  • Garlic:1 clove
  • Sesame oil:1 tbsp
  • Doubanjiang Chinese chili paste:1/2 tsp
  • Kasho Sichuan pepper:1/2 tsp
  • (A)Sugar:1 tsp
  • (A)Cooking sake:1 tbsp
  • (A)Soy sauce:1 tbsp
Cooking Instructions
  • Cut the Tofu Kamaboko into 6 pieces. Mince the garlic. Remove the fibers from the celery and slice diagonally into 1-2cm pieces (save the leaves for garnish). Mix together the (A) ingredients and set aside.
  • Put sesame oil, garlic, Doubanjiang chili past, and Kasho Sichuan pepper in a frying pan and cook at low heat until the garlic becomes fragrant. Add the Tofu Kamaboko and celery and stir fry at medium heat for 2-3 minutes. Stir in the (A) mixture. Once the liquid has evaporated, remove from heat.
  • Serve on a plate and garnish with celery leaves.

Ingredients (2-3 servings)
  • Marumori Honey:Season to taste
  • Baguette:6 slices
  • Strawberries:3-4
  • Camembert cheese:1/2 block
  • Black pepper:Season to taste
  • Mint:Season to taste
Cooking Instructions
  • Dice the strawberries into 1cm pieces. Cut the Camembert cheese into 6 pieces.
  • Spread the cheese on the baguette slices and toast until golden brown.
  • Place the diced strawberries on the toast slices, decorate with mint, and sprinkle with black pepper. Finish with a drizzle of Marumori Honey.

Hippo Heso "Belly-Button" Daikon Radish
Beef Flavor Soup

Ingredients (4 servings)
  • Hippo Heso "Belly-Button" Daikon Radish:1 bag
  • Beef tendon:200g
  • Ginger, sliced:1 tbsp (15g)
  • Water:800ml
  • Sake:100ml
  • Onion:1/2
  • Carrot:1/2 stick
  • Naganegi scallion:1 stem
  • Romanesco Broccoli:1/4 head
  • Oil:Season to taste
  • Salt:Season to taste
  • Dill:Season to taste
Cooking Instructions
  • Soak the Heso Daikon Radish for 20 minutes in 40℃ lukewarm water, and then remove and set aside.
  • Cut the naganegi scallion into chunks. Cut the beef tendon into bite-sized chunks. Slice the onion like you would an apple. Cut the carrot crosswise and then cut the four sections into 2-3mm slices. Divide the Romanesco broccoli into florets.
  • Fill a pot with water and Japanese sake, add the naganegi scallion, ginger, and beef, and cook. When scum forms on top of the water, spoon it out. When the pot boils, cover and simmer at low heat for 30 minutes.
  • Place a strainer over a bowl, lay a paper towel on top, and strain the soup. (The beef can be used in another dish, such as stew.)
  • Spread oil on a hot pan, and stir fry the carrot and onion until they begin to soften. Pour in the soup, add in the Heso Daikon radish and stew at medium heat for 10 minutes. Add the Romanesco broccoli and stew for another 5 minutes. Finally, season with salt and decorate with dill.
  • Feel free to use other vegetables you like.
  • You can also try adding in boiled Shiroishi Umen noodles.
