Fermentation Chef Haruka Mano

Japanese sake, more casually.
Let's use fermented seasonings in everyday cuisine.

Haruka Mano
Born in 1990, she graduated from Hosei University with a degree from the Faculty of Human Environments. After leaving a job at a firm in her specialty, she acquired a Food Coordinator certification. She gained experience in restaurant kitchens and as an assistant to cooking experts. In 2016 she began independent freelancing.
With a focus on finding foods that go with Japanese sake, she engaged in a variety of activities, such as recipe development and cooking class lecturer.
She supervises a cooking school located in front of Shinjuku Gyoen National Garden, which teaches about Japanese sake and fermented food pairings.
She has visited over 60 breweries around the country that make sake, miso, and soy sauce. She specializes in proposing simple yet flavorful dishes that make use of fermented seasonings to bring out the deliciousness of the ingredients.
